Collection: Sauvy B Has Four Personalities: One Grape, Four Countries

"Sauvy B" became internet shorthand for one thing — a cold, crisp, passion-fruit white you don't think too hard about. That reputation is built almost entirely on one region: Marlborough, New Zealand. But Sauvignon Blanc is among the most transparent grapes there is, taking its shape from the ground it grows on. Move it from a New Zealand riverbed to a cold Italian mountainside to French fossil-limestone to a Napa volcano, and you get four wines that barely taste related. This week we poured four Sauvignon Blancs from four countries to show what the meme flattens. Same grape. Four addresses. Taste them together and the joke stops making sense.
The Stoneleigh Sauvignon Blanc Marlborough 2025 is the archetype the meme is built on. The 178-hectare vineyard sits in Rapaura, on an ancient Wairau Valley riverbed locals call the Golden Mile. Its deep, low-nutrient gravel is studded with pale "sunstones." Those stones reflect daytime sun into the canopy and radiate stored heat after dark. That warmth ripens the fruit early and lifts its aromatics. Winemaker Jamie Marfell has worked these blocks since 2002, drawing on some of Marlborough's oldest grafted Sauvignon Blanc. The wine is punchy and tropical — grapefruit, passion fruit and tropical stone fruit over mouth-watering acidity and a mineral edge. It closes on lingering fresh passion fruit. The estate is certified sustainable, organic and vegan. At $18.99, it's the easiest yes here.
The Giovanni Dri Sauvignon Friuli 2024 comes from the opposite kind of place. Dri farms nine hectares at nearly 400 meters in Ramandolo — the coldest corner of Colli Orientali del Friuli, near the Austrian and Slovenian borders. The vines grow on ponca, a soil of alternating marl and sandstone layers. The slopes are steep enough that they have been terraced by hand over centuries. That cold elevation and mineral rock pull the wine in a savory direction. This is 100% Sauvignon with an intense bright-yellow color and aromas of verbena, fern and elderberry. The palate is complex and persistent — sapid, fresh and full-bodied rather than tropical. It's our staff pick this week. Pour it with tempura, shellfish, or poultry and a rich salad. It runs $22.99.
The Francis Blanchet Pouilly-Fumé Calcite 2024 explains its own name. Strike two vineyard stones together here and they release a smoky, gunflint smell — the "fumé" the appellation is named for. Eight generations of Blanchets, now Francis with son Mathieu, farm this land. Their vines sit on Kimmeridgian marl, the chalky, fossil-packed limestone that also underlies Chablis. That limestone is the "Calcite" the cuvée is named for. The estate has been HVE-certified since 2019, and the vineyards are plowed and mechanically hoed. The wine is round and full-bodied, driven by minerality rather than fruit. Expect citrus peel, sea salt, crushed oyster shell and that signature flinty smoke. Serve it at 12–13°C with lobster, white meats in cream sauce, or Savoyard cheese dishes. It's $29.99.
The Cade Estate Sauvignon Blanc Napa Valley 2024 is the splurge, and the most worked. Cade ferments it with eleven yeast strains across three vessels — stainless steel, concrete eggs and French oak. That approach builds texture rather than just crisp snap. Fruit comes from six Napa sites across Pope Valley, Oakville and St. Helena. It also draws on Cade's CCOF-certified Howell Mountain estate at 1,800 feet. There, iron-rich volcanic soils and temperature inversions above the fog line extend hang time. The blend rounds out the Sauvignon Blanc base with Sauvignon Musqué, Viognier and Sémillon. Five months sur lies adds the creamy weight. Look for honeysuckle and passion fruit up front, then grapefruit and lemon custard, and a creamy, vibrant finish. Try it with Dungeness crab or a lemony roast chicken. It's $49.99.
