Sake is a Japanese brewed beverage made from rice, water, yeast, and koji mold, which converts rice starch to sugar for fermentation. Despite the term rice wine, it is brewed more like beer. How much the rice is polished before brewing sets the grade: the more polished, the more refined and aromatic the sake.
