Bourbon is America's signature whiskey, made from a mash of at least 51% corn and aged in new charred oak barrels — the rule that gives it its deep color and sweetness. Most comes from Kentucky, though it can legally be made anywhere in the United States. That new-oak aging drives flavors of caramel, vanilla, and baking spice.
