YATIR NEGEV DAROM RED 2021

Darom—Hebrew for "south"—is Yatir Winery's label dedicated exclusively to fruit from Israel's Negev and southern Judean Hills, launched by chief winemaker Eran Goldwasser, who has led Yatir since its founding vintage in 2000. Vineyards sit at elevations of 600 to 900 meters, where cool desert nights temper the intense daytime heat, producing this seven-variety Shiraz-led blend of Marselan, Zinfandel, Merlot, Tempranillo, Mourvèdre, and Viognier. Each variety is aged separately in oak and concrete vats for nine months before blending, delivering red raspberry, juicy strawberry, and white pepper, with soft tannins and a fresh, fruit-driven finish.
