WOODINVILLE BOURBON MOSCATEL FINISHED

A Moscatel-finished bourbon is a rarer style, and Woodinville's version is built from grain to bottle with unusual specificity. Corn, rye, and malted barley are grown exclusively for the distillery on the Omlin Family farm in Quincy, Washington, then distilled in Woodinville before aging in private barrel houses on the east side of the Cascades, where extreme temperature swings accelerate oak extraction. The whiskey finishes in 200-gallon Moscatel de Setúbal barrels from Portugal's Setúbal Peninsula, adding dried apricot, orange peel, and honey-toffee sweetness, with candied nuts and fennel on the nose and a lingering finish.
