Master Distiller Drew Kulsveen introduced this 8-year wheated bourbon in 2022 using Willett's 65% corn, 20% wheat, 15% malted barley mash bill, distilled in Bardstown on the family's copper pot still—replicated from founder Thompson Willett's 1936 patent—and column still combination. Limestone-filtered spring water from the estate pond and proprietary yeast ferment 3-5 days in stainless steel before distillation and aging in char #4 barrels from Independent Stave Company's Kentucky cooperage across eight rickhouses, some dating to the 1930s.
Non-chill filtered at 54% ABV, this limited release shows the softer, sweeter character wheat provides compared to rye's spice, with vanilla, caramel, and bread notes from extended barrel contact in Kentucky's temperature-cycling warehouses that expand and contract wood to extract color, tannins, and oak sugars over eight years.
