Founded in Seattle in 2010 by co-founder and master distiller Matt Hofmann, Westland Distillery sources 90% of its barley from Washington State's Skagit Valley, partnering with WSU Breadlab since 2012 to develop flavor-focused, organically grown barley varieties through regenerative agriculture—earning the 2022 Global Sustainable Distillery of the Year award. The Pacific Northwest's temperate, humid climate and rich volcanic soils create ideal barley-growing conditions superior to Scotland, while rotational farming adds carbon to soil and produces complex grain flavors unavailable through commodity systems. This flagship American Single Malt at 46% ABV employs a five-malt bill including roasted Munich, Extra Special, Brown, and Pale Chocolate malts fermented with Belgian brewer's yeast, then matured predominantly in new slow-grown, air-dried American oak, delivering cherry cake, graham cracker, crème brûlée, chocolate custard, jasmine, vanilla, caramel, coconut, and a creamy mouth-coating texture.
