The Main river basin in Churfranken — sheltered between the Spessart and Odenwald forests — creates a mild microclimate that lets Pinot Noir ripen fully on iron-rich red Buntsandstein, a primary sandstone bedrock rare in Germany. Sebastian and Paul Fürst farm their Bürgstadt and Klingenberg parcels organically with biodynamic practices. The Tradition pulls from younger vines and declassified lots, fermented in open wooden vats with a meaningful proportion of whole clusters before extended barrel aging. Red cherry, raspberry, rose petal, and baking spice come through, with silky tannins and a mineral lift on the finish.
