The "Pur Mineral" Riesling from Sebastian and Paul Fürst sources from the Erste Lage and Grosses Gewächs parcels of the Bürgstadter Berg in Churfranken — essentially a pre-selection from the top sites. The vines grow on weathered red Buntsandstein in the Main river basin between the Spessart and Odenwald forests, where the warm microclimate is moderated by cool nights. The estate farms organically and applies biodynamic practices. Whole-bunch pressed, spontaneously fermented, and aged largely in large neutral oak with six months on the lees. Bone-dry at roughly 11.5% ABV, the 2024 shows green apple, lime, white peach, wet stone, and a saline, steely finish.
