Fifth-generation in Laurent Champs's hands, Vilmart & Cie has farmed its 11 Rilly-la-Montagne hectares organically since the domaine's founding, working parcels that include the premier cru Blanches Voies lieu-dit — a south-facing chalk and limestone hillside that bucks Rilly's typical north exposure. Grand Cellier d'Or 2020 blends 80% Chardonnay with 20% Pinot Noir from vines over 50 years old, fermented and aged in four-to-six-year-old barrels with malolactic blocked, then 42 months on lees at 7g/L dosage. Expect brioche, white peach, and toasted hazelnut with a chalky, tensile finish.
