Founded in 2005 by Luís Patrão and Eduarda Dias, Vadio revived Bairrada's sparkling wine tradition in 2007 by establishing a solera system now containing 13 vintages from Vale D. Pedro's organically farmed clay-limestone vineyards. This non-vintage blend of 60% Bical, 30% Baga, and 10% Cercial undergoes whole-cluster pressing, barrel fermentation, and eight months on lees before 30% is extracted annually for bottling while the solera is replenished with new harvest. Traditional method second fermentation and minimum 18 months on lees before disgorgement yield 12.5% alcohol with dried fruit, candied notes, saline minerality, creamy texture, and balanced acidity—a 93pt score from Wine Advocate reflects the complexity of this perpetual aging system.
