SIGNATORY VINTAGE CAOL ILA 2012 9YR

Caol Ila, founded in 1846 on Islay's northeastern coast overlooking the Sound of Islay, is the island's largest distillery, producing around four million litres annually. The name translates from Gaelic as "Sound of Islay," and the distillery draws its water from peat-filtered Loch Nam Ban. Signatory Vintage selected this single bourbon hogshead (cask #318281, 372 bottles), distilled June 20, 2012 and bottled April 5, 2022 at 46% ABV, non-chill filtered with natural color. Nine years of hogshead maturation preserves the distillery's trademark lighter, grassy peat profile, delivering sweet malt, pineapple rind, and fresh peach on the nose, with vanilla, gentle brine, and herbal smoke on the palate and a clean, lightly spiced oak finish.
