Distilled November 16, 2009, Caol Ila is Islay's largest distillery, drawing peat-rich water from Loch Nam Ban and sitting hard on the Sound of Islay where Atlantic exposure is relentless. The result: grassy peat smoke layered with briny sea salt, lemon peel, and vanilla, finishing long with creamy malt and a persistent coastal salinity.
