Most Caol Ila ends up as blending stock for Johnnie Walker — a single cask bottling like this one, pulled by Signatory Vintage from hogshead #319407, represents the opposite end of the spectrum: one barrel, fully traceable. Distilled October 22, 2009 and bottled June 4, 2019 at 43% ABV with natural color and no chill-filtration, this nine-year-old uses malted barley peated to 35 ppm from Diageo's Port Ellen Maltings, processed with peat-filtered water from Loch Nam Ban. The result is grassy, coastal smoke with lemon peel and fresh malt, resolving into brine, vanilla, and herbal smoke on a clean, medium-length finish.
