White melon, ripe pear, and a whisper of floral sweetness arrive immediately, followed by a clean, dry finish with barely perceptible acidity. Shimizu-no-Mai is produced in Akita Prefecture, a cold northern region known for exceptionally pure snowmelt water drawn from three converging mountain rivers — a critical variable in sake fermentation. Junmai Daiginjo classification means no added distilled alcohol and rice polished to at least 50% of its original grain size, intensifying delicacy and aroma. The result is a light-bodied, refined sake that drinks well chilled alongside sashimi or lightly seasoned seafood.
