SHIMIZU-NO-MAI PURE DUSK JUNMAI DAIGINJO

Takashimizu Brewery has operated in Akita Prefecture since 1944, drawing brewing water from the region's famously soft, iron-free supply fed by three converging rivers — a quality Akita has prized for sake production for centuries. Pure Dusk is their Junmai Daiginjo, made with rice milled to 45% of its original grain, well below the 50% threshold required for the category. Fermented at low temperatures to develop its aromatic profile, it delivers pear, green apple, and cantaloupe on the palate with a clean, mineral-edged finish.
