SHILOH MOSAIC 2020

Most Bordeaux-style blends from the Judean Hills lean Cabernet-forward, but Shiloh's Mosaic pulls from all four major Bordeaux varieties — Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot — assembled from vineyards sitting close to 800 meters elevation in the ancient Shiloh region. The desert climate there delivers wide diurnal swings, with cold nights preserving acidity against the warm days that push full ripeness. The result is an opaque, deeply colored wine with aromas of blackberry, roasted coffee, and cocoa, leading to a palate of black fruit, blueberry, and raspberry with rich tannins and a long finish.
