SHIBUI WHISKY 8YR SHERRY CASK

Okinawa's subtropical heat and humidity push cask maturation faster than temperate climates, and that accelerated aging — alongside Pacific Ocean air — is the engine behind this single grain whisky from Shinzato Distillery, established in 1846 and the oldest operating distillery on the island. Shibui sources the whisky here and distills it in stainless steel pot stills from Indica long-grain rice with black koji, then matures it for eight years in ex-fino and Manzanilla sherry casks. The result is bottled at 40% ABV: dried stone fruit, red fruits, and vanilla on the palate, a spiced oak backbone, and notes of banana and cream on the finish.
