SANTI SOLANE VALPOLICELLA CLASSICO SUPERIORE RIPASSO 2020

Ripasso is a technique — not a grape — and Santi's Solane version uses Amarone pomace to referment the base Corvina and Rondinella blend, adding weight and dried-fruit complexity without tipping into full Amarone richness. The grapes come from Valpolicella Classico, the original hillside zone west of Verona, where volcanic basalt and limestone soils define the appellation's structure. Aging in cherry-wood barrels, a traditional Veneto choice, softens the tannins and pulls out the region's characteristic red cherry and spice notes. The result finishes with dried cherry, cocoa, and a light earthy grip.
