Raúl Pérez—named Best Winemaker in the World by Bettane+Desseauve in 2015—has made wine in Bierzo since 1994, rooted in Valtuille de Abajo where his family has farmed for over 300 years. His Ultreia St. Jacques is a Mencía-dominant field blend with Bastardo, Garnacha Tintorera, Palomino, Doña Blanca, and other varieties from old vines planted between the 1890s and 1940s on clay, alluvial stones, and sand. Fermented 50-60% whole-cluster in large open-top oak vats with extended 60-day maceration, then aged in 225-500L barrels, it is bottled un-fined and unfiltered, delivering dark wild berry, violet, and earthy mineral tones with a savory, graphite-tinged finish.
