Unlike most Napa Cabernets built from a single AVA, 'Annum' deliberately bridges two: Oakville (60%) and Oak Knoll (40%), sourced entirely from practicing organic vineyards. Oakville's broken-down rock over silt and gravel pushes structure and concentration, while Oak Knoll's cooler microclimate contributes lift and finesse. The blend is 88% Cabernet Sauvignon and 12% Petit Verdot, fermented with native yeast and put through spontaneous malolactic, then aged 24 months sur lies in new French oak with bi-monthly bâtonnage — a regimen more common in white wine production than Cabernet. Black cherry, cassis, and dark plum lead, with integrated oak and a firm, well-structured finish.
