Burgundy's limestone-rich soils — the same mineral foundation that drives the appellation's reputation — give Aligoté a tart, chiseled character that Chardonnay rarely achieves. Pierre Mayeul sources from these parcels in a project involving Ludivine Griveau, the first female cellar master in Hospices de Beaune's 160-year history. The 2021 is fermented to preserve the grape's natural acidity, delivering aromas of white citrus and apple blossom, with fresh green apple and a saline, chalky mid-palate finishing clean and bright.
