Commanderie de Peyrassol, one of Provence's oldest estates with documented roots to 1256, has been under Philippe Austruy's ownership since 2001, when modern cellar upgrades were introduced without abandoning the estate's low-yield philosophy. The wine opens with honey, candied citrus, and white blossom, then fills out on the palate with acacia, apricot, and ripe pear, finishing with genuine length and a creamy, substantial texture.
