Distillerie Poisson produces Père Labat 59 at their sprawling estate using fresh-pressed juice from four native sugarcane varieties rather than molasses, then distills it in a traditional creole column still. Bottled at 59% ABV, the unaged blanc delivers grassy, floral, and mineral character with light tropical fruit and a sharp peppery finish.
