PASCAL JOLIVET SANCERRE BLANC 2024

Since founding his domaine in 1987, Pascal Jolivet has built one of Sancerre's largest independent estates, farming over 120 acres across parcels including les Caillotes and le Chêne Marchand under sustainable, organic, and biodynamic practices. Sancerre's left-bank terroir combines clay, limestone, and flint soils that push pronounced minerality through the wine. Wild yeast fermentation in temperature-controlled stainless steel keeps the profile taut and aromatic. Expect grapefruit, white flower, and wet stone on the nose, with racy acidity, a tightly wound palate, and a dry, flinty finish.
