Crisp Sauvignon Blanc thrives in Sancerre's diverse terroirs of clay, limestone, and flint soils along the Loire's left bank, where Pascal Jolivet has cultivated over 120 acres of prime vineyards since founding his domaine in 1987, practicing sustainable, organic, and biodynamic viticulture guided by winemaker Valentina Buoso. The estate's environmentally friendly approach includes wild yeast fermentation in temperature-controlled stainless steel, allowing nature to guide the winemaking process across premier sites like "les Caillotes" and "le Chêne Marchand."
