Pascal Balland farms 22 acres of vines in the legendary village of Bué, the historic heart of Sancerre production where Kimmeridgian limestone and clay soils impart distinctive mineral tones to Sauvignon Blanc grown using sustainable, organic, vegan, and biodynamic practices. The Les Caillotes vineyard takes its name from the small pebbles and fossilized oyster shells embedded in the soil—remnants of ancient seas that now provide exceptional drainage and mineral complexity. After pneumatic pressing, the wine ferments in temperature-controlled stainless steel and ages on fine lees before spring bottling, developing lemony brightness with crisp green apple, flint, and citrus zest notes. The palate shows dry, aromatic intensity and lively acidity with pronounced chalky minerality—a classic Bué expression perfect alongside shellfish, fresh fish, or local Chèvre.
