The Nonino family has distilled in Friuli-Venezia Giulia since 1897, and in 1973 they pioneered single-varietal grappa by distilling fresh pomace from individual grape varieties rather than blended leftovers — a practice that reshaped the category. Friuli's cool alpine climate and limestone-rich soils give their Merlot pomace concentrated aromatic character. Distilled in copper pot stills with steam to protect delicate volatiles, this grappa delivers rose petal, cherry pit, and soft stone fruit with a round, clean finish that reflects precise temperature control across five generations.
