NIKKA YOICHI

Single malt Japanese whisky distilled with direct coal firing is rare — Yoichi is one of the last places on earth doing it consistently. Masataka Taketsuru founded the distillery in 1934 in Hokkaido, selecting the coastal site for its cool, damp climate and sea air, conditions he recognized as analogous to Scotland's whisky regions. Coal firing produces a robust, slightly sooty heat profile that shapes the spirit's character from the still outward, while ocean proximity during aging introduces a saline edge. The result is peat smoke, dried fruit, and brine with a long, earthy finish.
