New York–grown apples form the entire base spirit here — not grain, not neutral cane — which gives Neversink's Flagship Gin a lush, silky texture that most London dry styles can't replicate. Distilled in Elmsford, New York, the apple distillate macerates with juniper overnight before 10 additional botanicals — coriander, star anise, cardamom, angelica root, orris root, citrus peels, cassia bark, and elderflower — are vapor-infused through a hybrid pot-and-column still. Candied grapefruit, green cardamom, and honeysuckle on the nose; lychee, cinnamon, and restrained juniper on the palate.
