Burgundy's Noir de Bourgogne blackcurrants — prized for their aromatic intensity and widely considered the finest variety for eating — anchor this liqueur alongside Royal de Naples berries from the Loire Valley, a softer, sweeter cultivar that rounds out the blend. Maison Ferrand, the Cognac-based house behind Plantation rum and Citadelle gin, produces Mathilde Cassis without stabilizers or preservatives, infusing the two varieties for an extended maceration period to draw out full fruit character. The result is deep and syrupy, with blackberry compote, Concord grape, and prune on the palate, finishing with a brush of vanilla.
