Maison Louis Latour, a historic Burgundy négociant, sources this Bourgogne Chardonnay from 30-year-old vines rooted in clay-limestone soils that define the region's celebrated terroir—the same calcareous marl that allows Chardonnay to achieve optimal ripeness while preserving bright acidity in Burgundy's temperate climate. Hand-harvested fruit undergoes temperature-controlled fermentation and complete malolactic conversion in stainless steel, then ages 8-10 months to develop its signature roundness. The 2023 vintage pours pale gold, opening with muscatel grape and warm brioche on the nose, while the palate delivers ripe yellow peach, buttery texture, and inviting amplitude—a versatile white that pairs beautifully with shellfish, charcuterie, and grilled fish.
