The Governo all'uso Toscano technique — documented as far back as the 14th century and largely abandoned once temperature-controlled fermentation became widespread — defines this wine from start to finish. Lanciola dries a portion of Sangiovese harvests for 20 days, then adds those concentrated grapes to actively fermenting must, boosting body and aromatic depth. Grown in Chianti Colli Fiorentini's clay-rich hills and aged eight months in barrel, Ricciotto delivers dark cherry, plum, dark chocolate, and warm spice, with a rounded mid-palate and earthy, leather-edged finish.
