Lanciola revives the ancient 14th-century Governo all'uso Toscano technique, where a portion of Sangiovese grapes are dried for 20 days before being added to fermenting must, concentrating flavors and enlivening the wine. Cultivated in the Chianti Colli Fiorentini's clay-rich hills, this 100% Sangiovese ages eight months in barrel, developing full, rounded fruit with earthy mineral notes, dark chocolate, leather, and warm spices. The palate showcases terrific concentration and depth from the partially dried grapes, revealing rich cherry and plum flavors supported by balanced structure. This traditional Tuscan method, used widely in Chianti before modern temperature-controlled fermentation, creates a seductive wine perfect for rabbit, game, or slow-cooked beef.
