Kaetsu Shuzo has brewed sake in Niigata's Chubu region for generations, taking the name Kanbara from a local fox-bride festival and the mysterious lights said to appear on Mt. Kirin nearby. Bride of the Fox is a Junmai Ginjo built from Gohyakumangoku rice milled to 50% — technically Daiginjo territory — but the brewery leans into a savory profile instead of chasing floral delicacy. Pristine mountain water from Niigata shapes the soft, clean frame. It opens with grilled nuts, pistachio, and a hint of white chocolate, then moves to ripe honeydew with a crisp, lightly sweet finish.
