KANBARA BRIDE OF THE FOX

Niigata Prefecture is Japan's benchmark sake region, where cold winters, pure snowmelt water, and high-polish rice culture define a style known for clean, refined flavor — and Kanbara's Bride of the Fox is built on exactly that foundation. Brewed at Kaetsu Shuzo, which has operated in this region for generations, the sake uses a 50% rice polishing ratio that technically qualifies it for Junmai Daiginjo classification, though its savory character lands closer to Junmai Ginjo in practice. Aromas lead with grilled nuts, pistachio, and a hint of white chocolate; ripe honeydew carries into a crisp finish with lingering sweetness. Exceptional with duck, miso-glazed black cod, or fig-stuffed pork loin.
