JEIO ORGANIC BRUT VALDOBBIADENE PROSECCO SUPERIORE

Desiderio 'Jeio' Bisol spent years identifying the steepest, most difficult-to-farm hillside sites in Valdobbiadene before the estate committed fully to certified organic viticulture across those plots. Grown on south-facing slopes at around 300 meters, the Glera, Chardonnay, Pinot Grigio, and Pinot Bianco ripen slowly, building the pronounced malic acidity the DOCG Superiore designation demands. The wine is made via Charmat method, with secondary fermentation in pressurized tanks to preserve freshness. Expect yellow peach, Comice pear, and apricot on the nose, fine persistent bubbles, and a clean, lightly saline finish.
