JAMESON IRISH WHISKEY

John Jameson founded his Dublin distillery in 1780; today the whiskey is made entirely at Irish Distillers' Midleton facility in County Cork. A blend of single pot still and grain whiskeys, both triple distilled, it draws on malted and unmalted barley sourced from farms within fifty miles of Midleton. The pot still component matures in a combination of first-fill bourbon and refill bourbon casks alongside some sherry-matured whiskey for added fruit; the grain whiskey — made from corn and barley — rests in first-fill ex-bourbon barrels. The result opens with marmalade, fudge, and a floral lift, moves into cooked orchard fruit and vanilla cream, and finishes with light pepper and orange rind.
