Organic and sustainably farmed, J. Bouchon's Pais Viejo is drawn from dry-farmed, gobelet-trained vines over 100 years old in the coastal reaches of Chile's Maule Valley — a region the Bouchon family has cultivated since Julio Bouchon acquired the Mingre estate in 1977, drawn by its granitic soils and ancient vineyards. The family's winemaking roots trace to 1887, when Emile Bouchon emigrated from Bordeaux. This light-bodied Pais pours bright cherry red and delivers strawberry, sour cherry, and wildflower aromatics with juicy, fresh acidity — versatile enough for fish, pasta, or as an aperitif.
