Laely Heron blends three cool-climate California AVAs for complexity—high-elevation Potter Valley in Mendocino, Sonoma side of Carneros, and fog-bathed Clarksburg near San Francisco Bay—all 100% Chardonnay with no oak or malolactic fermentation to preserve natural acidity and varietal expression. Night-harvested grapes are cold-pressed at the winery in morning, cold-settled two days, then cool-fermented 27 days in stainless steel with roughly four months lees contact and judicious bâtonnage when needed at 13.5% alcohol. Orange blossom, lemon blossom, ripe white peach, beeswax, exotic citrus, and stone fruit show mineral notes with simultaneous freshness and roundness in an elegant finish that honors Chardonnay's natural richness without oak's weight.
