White flowers, citrus peel, and a clean kick of white pepper and ginger come through immediately — the result of Chardonnay pomace distilled in stainless steel alembic without any barrel aging, preserving the grape's delicate aromatics whole. Gaja sources the pomace from Gaia & Rey vineyards across Treiso and Serralunga d'Alba, where sandy-clay and compact calcareous marl soils in Piedmont's Langhe give the Chardonnay both richness and acidity. The crystal-clear spirit carries a full, round palate from the concentrated sugars and phenolics in fresh pomace pressed and distilled immediately, before oxidation can strip the fruit.
