Angelo Gaja planted Cabernet Sauvignon in Barbaresco village in 1978 on the Darmagi vineyard—"what a pity" in Piedmontese dialect, reflecting local skepticism about non-native varieties—where clay-silt soils and excellent sun exposure produce pomace for this grappa aged 24 months in oak. Distilled from Cabernet Sauvignon grape skins, seeds, and stems after fermentation, this 45% ABV spirit demonstrates how Piedmont's clay-limestone terroir influences even post-fermentation distillates, creating floral and baking spice aromatics, substantial body from the grape solids' concentrated phenolics, and a finish of dark fruit extract, fresh acidity, and integrated oak tannins. The extended barrel aging—unusual for grappa, which typically rests in stainless steel or glass—adds vanilla, toast, and oxidative complexity while mellowing the spirit's natural aggressive alcohol heat into a smoother, more harmonious drinking experience. Darmagi vineyard's balanced drainage prevents water stress while the clay retains enough moisture for even ripening in Barbaresco's continental climate.
