FUKUCHO MOON ON WATER

A Junmai Ginjo bottled without charcoal filtration is already a category statement — what makes Fukucho's Moon on Water distinct is that it's brewed by Miho Imada, one of Japan's only female toji and brewery owners. Fukucho operates in Akitsu, Hiroshima, where exceptionally soft water demands precise fermentation control but yields vibrant aromatics when mastered. Imada uses locally grown Hiroshima rice, including the revived Hattanso strain, and skips charcoal filtering to preserve the full aromatic profile: lime, melon, fennel, and white pepper on the nose, with ripe cantaloupe and anise on the palate and a mineral finish.
