Smoke, flint, and zested lemon hit first — this is Pouilly-Fumé doing exactly what the appellation's name promises. The Cuvée Silice draws from silex-dominant soils, the flint-rich subsoil unique to a slice of the Pouilly-Fumé appellation that stamps a gunsmoke minerality onto the Sauvignon Blanc grown there. Francis Blanchet, now working alongside son Mathieu, has farmed these parcels since the early 1990s. White flowers and lime pith build on the mid-palate, finishing crisp with white pepper and a saline, stone-dust persistence.
