Heaven Hill Distilleries produces Elijah Craig 18 Year Single Barrel bourbon using a 78% corn, 10% rye, 12% malted barley mashbill, aged in charred oak barrels within Kentucky rickhouses where seasonal temperature fluctuations drive the spirit deep into the wood over nearly two decades. Named after the Baptist minister credited with first maturing bourbon in charred oak casks in 1789, each barrel is individually selected, dumped, and bottled at 90 proof with handwritten barrel numbers and bottling dates. The nose opens with honey, vanilla, and caramel balanced by toasted oak, while the palate delivers graham cracker, maple syrup, dark chocolate, cinnamon, and dried cherry notes.
