Francis Egly's family has farmed Grand Cru vineyards in Ambonnay for four generations, with this organically farmed flagship drawing 90% of its fruit from that single Montagne de Reims village, plus Bouzy and Verzenay. Co-fermented with indigenous yeasts, aged in barrel with 10% new oak, and held 48 months on the lees without malolactic fermentation — then disgorged at 2g/L, unfined and unfiltered. Baked apple, crushed citrus, toasted brioche, and pear lead in; the palate is full-bodied with chalky minerality, bright acidity, and a long saline finish.
