Domaine Vocoret & Fils, established in 1870, is a fourth-generation family estate with 40 hectares in Chablis, practicing sustainable agriculture across vineyards dominated by old vines planted mostly in the 1970s and '80s. Among a small handful of Chablis producers, Vocoret ferments in large oak foudres before transferring to stainless steel for malolactic fermentation and up to 12 months of aging—a method that builds texture while preserving Chablis's hallmark precision. Les Forêts sits on the western bank of the Serein river on south-facing Kimmeridgian slopes, producing steely, mineral-driven Chardonnay with lemon curd, white peach, and a bracing, saline finish underscored by 180-million-year-old fossilized oyster shell soils.
