Multi-generational and family-run, Domaine Michel Niellon has long been one of Chassagne-Montrachet's most consistent producers, farming limestone-rich soils that define the appellation's mineral backbone. Their Les Chaumées premier cru Chardonnay begins fermentation in stainless steel before moving to small oak barrels — 20–30% new — where malolactic conversion completes and minimal bâtonnage preserves natural texture. Eight to nine months of aging follow. The result opens with smoky pear, citrus, and white orchard fruit, then delivers a fuller-bodied palate with pronounced minerality, yellow fruit, and a sappy mid-palate quality before a long, dry finish.
