Whole-cluster fermentation with indigenous yeasts is the structural decision that defines this lieu-dit bottling from Vincent Dureuil, one of the Côte Chalonnaise's most rigorous organic growers. Les Doues is a 0.33-hectare parcel at Mercurey's highest elevation, east-facing, planted on limestone and clay that drives the wine's firm backbone. After fermentation, it ages 12 months in barrel with 33% new oak, then six months in tank before bottling unfined and unfiltered. Red cherry, earth, and a chalky mineral finish mark the result.
