DOMAINE DU ROC DES BOUTIRES POUILLY-FUISSE EN BERTILIONNE 2022

Domaine du Roc des Boutires farms a 0.57-hectare parcel at 350 meters in En Bertilionne — the highest terroir in Pouilly-Solutré — where 45-year-old Chardonnay roots into Jurassic chalky limestone and marl, the same substratum underlying Côte d'Or grands crus. The 2022 grapes were hand-harvested in multiple passes, whole-cluster pressed by gravity, cold-settled at 8°C, and slow-fermented over one month. Six months of malolactic followed by 15 months in 70% oak builds a full-bodied wine with white peach, honeysuckle, and bitter citrus pith held in check by bracing acidity.
