Domaine du Roc des Boutires farms the 0.57-hectare En Bertilionne climat on east/southeast-facing slopes in Pouilly-Fuissé, where 45-year-old Chardonnay vines planted at 10,000 per hectare push into Jurassic limestone, marl, and deep chalky substrata — the same geological backbone as Côte d'Or grands crus. Spring frost cut 2021 yields to just 16 hl/ha across hand-harvested lots picked September 21–29. Whole-cluster gravity pressing, cold settling at 8°C, and a slow one-month fermentation lead into six months of malolactic, then 15 months in 70% oak and 30% steel. Ripe stone fruit, lemon oil, and chalky minerality define the palate.
