The 0.57-hectare En Bertilionne climat sits on east/southeast-facing slopes in Pouilly where 45-year-old Chardonnay vines planted at 10,000 per hectare root into limestone shoals interlaced with marl and deep chalky substrata—the same Jurassic geology as Côte d'Or grands crus. Spring frost and humidity in 2021 reduced yields to 16 hl/ha, hand-harvested September 21, 28, and 29 with heterogeneous but accomplished ripeness. Whole-cluster pressed by gravity, cold-settled at 8°C, then slow one-month fermentation followed by six-month malolactic before 15 months aging in 70% oak and 30% steel produces a taut Chardonnay with ripe stone fruit, lemon oil, and chalky minerality at 13% alcohol and 3.40 pH.
