Domaine du Roc des Boutires farms 4.2 hectares across 14 parcels in Pouilly on Jurassic limestone identical to Côte d'Or premiers and grands crus, with most Chardonnay vines planted in the early 1970s using sustainable practices. The 0.57-hectare En Bertilionne climat sits on east/southeast-facing slopes where 45-year-old vines root into yellow-brown limestone soils banded with marl. Hand-harvested in small cases, whole-cluster pressed, and cold-settled at 8°C before natural malolactic fermentation, this wine aged 15 months in 70% oak and 30% steel, showing white peach, honeysuckle, and citrus pith with biting acidity, subtle bitterness, and mineral tension that cuts through the 13% alcohol.
